Southwest Cheese operates a dedicated processing facility in Clovis, New Mexico, that is responsible for the production of 280 million pounds of superior block American, Cheddar, Monterey Jack and Colby Jack cheeses. Our cheeses are made from the freshest local milk, and shipped out to a number of nationally-known and international companies for packaging and resale.
